Smokey Kielbasa and Veggies

This easy dish is perfect for lunch or supper. Smokey kielbasa and veggies served with warm bread. Enjoy!

Ingredients
  • 2 red potatoes
  • ½ yellow onion
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 8 oz package of Maitake mushrooms
  • Half head of cauliflower (remove florets from the core)
  • 1 carrot sliced on the bias
  • 1 cup of fresh sauerkraut
  • 1 LB Kielbasa, cut in 4 even pieces
  • 1 tbsp fresh parsley, chopped
  • Olive Oil
  • ¾ cup of water
  • Seasonings (I like to premix these and season as I go)
  • 1 tbsp. smoked paprika
  • 1 tbsp. oregano
  • ½ tbsp. fennel seed
  • Salt & Pepper
Instructions
  1. This recipe is so easy and really flavorful. In a saute pan add the olive oil, a couple of spins around the pan. To the oil add thinly sliced potatoes, yellow onion, shallots, garlic, mushrooms and cauliflower. Season with salt and pepper and the spice mixture.
  2. Cook on medium heat about 10 minutes. Add ½ cup of water and continue to cook for 5 minutes more until the veggies are soft and the cauliflower is tender.
  3. Add the carrot, sauerkraut and kielbasa and parsley. Add ¼ cup of water, cover the pan and simmer for 10 minutes.
  4. Serve with warm crusty bread.
