Ingredients
  • 1 small head Romaine
  • ¼ head iceburg
  • 2 cups baby spinach
  • ½ English cucumber
  • 6 radishes
  • 2 stalks celery
  • 2 carrots (ribbons)
  • 2 Roma tomatoes
  • ½ cup Kalamata olives
Instructions
  1. Rinse and rough chop the Romaine, iceburg and place in salad spinner to dry
  2. Rinse spinach and place in salad spinner to dry
  3. Wash the rest of the veggies, pat dry.
  4. To a large bowl, add the Romaine, iceburg and spinach.
  5. Chop up the cucumber, radishes and celery, add to the bowl. Add carrot ribbons (use peeler length-wise on carrot to create long ribbons.) Cut the tomatoes into quarters, then slice wedges. Add olives. Toss with extra virgin olive oil, the juice of a lemon, season with sea salt & fresh cracked pepper.
