Crostini with Ricotta and Peach

This simple appetizer takes minutes to prepare - it's savory and sweet, a lovely addition to any cocktail party.

Serves: 24 pieces
  • 1 baguette, slices about 1.5" thick
  • 1 pint of ricotta cheese
  • 2 organic peaches, washed and sliced into half moons (no need to remove skin)
  • Honey
  • Olive Oil
  • Pre-mix a pinch of dill, herbs de Provence, smoked paprika, salt and black pepper
  1. Peach Crostini

  2. Preheat oven to 400 degrees, convection bake
  3. Slice the baquette, place the pieces of bread in a large cookie sheet
  4. Drizzle with olive oil
  5. Lightly salt and pepper the bread
  6. Dollop the top of each piece with Ricotta cheese
  7. Place peaches on top of the cheese
  8. "Kiss" with pre-mixed seasonings
  9. Drizzle with honey
  10. Bake in the oven for 10-12 minutes, then lightly broil for a few minutes
  11. Remove from oven, serve immediately!
