Lavosh with caramelized onions and apricot is a sweet and savory start to any meal!

Serves: 1 doz
Ingredients
  • 2 sheets of soft Lavosh from your favorite market (these will go in the oven)
  • 2 small yellow onions
  • 8 oz of shitake mushrooms (you can substitute for your favorite)
  • 2 tbsp apricot preserves
  • 1 tbsp brown sugar
  • Olive oil
  • 1 tbsp butter
Seasonings
  • Salt & Pepper plus these dried herbs
  • ½ tbsp Oregano, Coriander OR Basil
Instructions
Prepare your veggies
  1. Peel and thinly slice (1/2 to ¼” thickness) onions (rings)
  2. Clean and thinly slice mushrooms
Onion Mixture
  1. In a medium frying pan heat the olive oil, 2 spins around the pan.
  2. Add the butter, melt it down.
  3. Add the onions and mushrooms, cook until they become translucent.
  4. Add salt, pepper and oregano and the coriander OR basil
  5. Add apricot preserves
  6. Add brown sugar
  7. Lower the heat and cook down for 20-25 minutes until the onions are caramelized. Isn’t that amazing? Remove pan from heat.
Lavosh
  1. Line a baking sheet with parchment paper
  2. Put two sheets of Lavosh down, side by side
  3. Drizzle olive oil over both sheets (sparingly)
  4. Spread the onion mixture over the top of each
  5. At 375 degrees, bake in the oven for about 10-12 minutes until crisp and lightly browned.
Notes
Serve with cool, sliced Jersey tomatoes & micro greens or arugula
A sprinkle of sea salt and fresh ground black pepper with a drizzle of olive oil over the top completes the dish!

Cut the Lavosh in 6 pieces. Serve with soup or as an appetizer.
