Roasted Rosemary Potatoes

Serves: 4 servings
- 4 russet potatoes
- ¼ cup olive oil
- Couple of handfuls grated Locatelli Pecorino
- Salt & Pepper plus these dried herbs:
- ⅛ tsp Cayenne pepper
- ½ tbsp Dill weed
- ½ tbsp Rosemary
- ½ tbsp Herbs de Provence
- Clean the potatoes, slice long-ways into wedges
- Put the potatoes in a baking sheet lined with parchment
- Pour olive oil over the top
- Add salt & pepper plus the dried herbs (sprinkle over the top)
- Lightly toss everything with your hands until the potatoes are nicely coated
- Sprinkle a handful of cheese over the top
- Place the potatoes in the oven at 400 degrees F. Bake for 30 minutes
- With a spatula gently move the potatoes around, turning them
- Bake for 30 more minutes and remove from oven. Sprinkle another handful of grated cheese on top and serve hot.
