These oven roasted rosemary potatoes are so easy to make. Packed with flavor, served hot with a bit of saltiness - delish!

Ingredients
  • 4 russet potatoes
  • ¼ cup olive oil
  • Couple of handfuls grated Locatelli Pecorino
Seasonings
  • Salt & Pepper plus these dried herbs:
  • ⅛ tsp Cayenne pepper
  • ½ tbsp Dill weed
  • ½ tbsp Rosemary
  • ½ tbsp Herbs de Provence
Instructions
  1. Clean the potatoes, slice long-ways into wedges
  2. Put the potatoes in a baking sheet lined with parchment
  3. Pour olive oil over the top
  4. Add salt & pepper plus the dried herbs (sprinkle over the top)
  5. Lightly toss everything with your hands until the potatoes are nicely coated
  6. Sprinkle a handful of cheese over the top
  7. Place the potatoes in the oven at 400 degrees F. Bake for 30 minutes
  8. With a spatula gently move the potatoes around, turning them
  9. Bake for 30 more minutes and remove from oven. Sprinkle another handful of grated cheese on top and serve hot.
