This Caprese style Lavosh is a perfect accompaniment to soup or in this case with grilled sausage. Can also be served as an appetizer.

Ingredients
  • 2 sheets of soft Lavosh from your favorite market (these will go in the oven)
  • 4 tbsp mascarpone cheese
  • 2 large heirloom tomatoes
  • 1 cup shredded mozzarella
  • Olive oil
  • Fresh basil
Seasonings *
  • Salt & Pepper plus these dried herbs
  • ½ tbsp Oregano, Coriander OR Basil
Instructions
  1. Line a baking sheet with parchment paper
  2. Put two sheets of Lavosh down, side by side
  3. Drizzle olive oil over both sheets (sparingly)
  4. Spread 2 tbsp of mascarpone over the top of each
  5. Add ½ cup of shredded mozzarella over the top of each
  6. Thinly slice your tomatoes into lovely little circles and place atop the Lavosh
  7. Season with salt, pepper and oregano
  8. Place about 8 or 10 basil leaves on top of each other, roll and thinly slice (chiffonade)
  9. Sprinkle over the top, drizzle with a little more olive oil
  10. At 375 degrees, bake in the oven for about 12-15 minutes until crisp and lightly browned.
