Buttery Corn on the Cob with Feta

Corn on the Cob simmered in butter, herbs & feta is a simple and delicious side dish. Gather 'round the table - rotisserie chicken or turkey may be the main attraction, but this corn on the cob is a close second.
Ingredients
- 8 ears of corn, shucked, rinsed, cut in half
- ¼ cup of salted butter
- ½ cup crumbled feta
- Olive Oil
- 2 cups of water
- Fresh chopped basil and parsley for garnish
- Seasonings
- ¼ TSP Herbs de Provence
- ¼ TSP smoked paprika
- ¼ TSP dill
- ¼ TSP course salt
- ¼ TSP black pepper
Instructions
- In a medium size stock pot add the corn, standing them up on their ends. Add the butter, a drizzle of olive oil, water and seasonings. Place on top of the stove on medium heat, bring to a simmer. Cook for 30 minutes with the lid on. Add the feta, cover and lower the heat. Cook for 10 minutes or so. Remove from heat. Transfer each ear of corn to a serving platter. Drizzle a little bit of the buttery stock over the top. Garnish with freshly cut basil and parsley. Serve!
