Crostini with Ricotta and Peach

This simple appetizer takes minutes to prepare - it's savory and sweet, a lovely addition to any cocktail party.
Ingredients
- 1 baguette, slices about 1.5" thick
- 1 pint of ricotta cheese
- 2 organic peaches, washed and sliced into half moons (no need to remove skin)
- Honey
- Olive Oil
Seasonings
- Pre-mix a pinch of dill, herbs de Provence, smoked paprika, salt and black pepper
Instructions
- Preheat oven to 400 degrees, convection bake
- Slice the baquette, place the pieces of bread in a large cookie sheet
- Drizzle with olive oil
- Lightly salt and pepper the bread
- Dollop the top of each piece with Ricotta cheese
- Place peaches on top of the cheese
- "Kiss" with pre-mixed seasonings
- Drizzle with honey
- Bake in the oven for 10-12 minutes, then lightly broil for a few minutes
- Remove from oven, serve immediately!
