Roasted Salmon with Dijon and Soy

Do you love salmon as much as I do? Salmon is so good for you and there are so many ways to prepare it. This recipe calls for marinade of Dijon, soy sauce and honey.
Ingredients
- 2 pieces of whole wild sockeye salmon
- 2 tbsp Dijon mustard
- ¼ cup soy sauce
- ¼ cup honey
- 1 tbsp of dry white wine (for marinade) and have a glass while you’re cooking
- ¼ cup olive oil
- Seasonings *
- Salt & Pepper plus these dried herbs:
- ⅛ tsp Cayenne pepper
- ⅛ tsp Ground mustard
- ½ tbsp Cilantro
- ½ tbsp Dill weed
Instructions
Marinade
- In a 16 oz measuring cup add the Dijon mustard, soy sauce, honey, white wine and olive oil. Whisk until it’s blended nicely. Set aside.
Rub
- In a small bowl add the cayenne, ground mustard, cilantro and dill weed. Mix it up to make the rub.
Salmon
- Clean the salmon and pat dry
- Season both sides well with salt and pepper
- Place in a zip lock bag and pour in the marinade. Seal the bag and move it around so the salmon is completely covered.
- Refrigerate for 20 minutes.
- Preheat the oven to 450 degrees F.
- Remove the salmon from the bag, place in a Pyrex baking dish, skin side up
- Spoon half the prepared rub onto the salmon, turn over each piece and do the same
- Bake with skin side down for 15 minutes
- Serve with a wedge of lemon

Variations
You may want to grill the salmon instead of baking it in the oven. Grill for 7 minutes on each side.
Substitute pure maple syrup for the honey
Substitute soy sauce for deep, rich balsamic vinegar
