Sweet Onion Crostini with Avocado

Sweet onion crostini with avocado can be served as an appetizer, or as an open faced sandwich for lunch. Serve with your favorite chilled white wine!
Ingredients
- 6-12 slices of Italian bread
- 1 clove of garlic, peeled and cut in half
- 2 small red onions
- 1 tbsp granulated sugar
- 2 tbsp dark balsamic
- 1 tbsp butter
- Olive oil
- 1 avocado
- Fresh lemon
Seasonings *
- Salt & Pepper plus these dried herbs
- ½ tbsp Oregano, Coriander OR Basil
- ½ tbsp dill
Instructions
- In a medium frying pan heat the olive oil, 2 spins around the pan. Add the butter, melt it down.
- Add the cook until they become translucent.
- Add salt, pepper, oregano and oregano and the coriander OR basil and dill
- Add sugar and balsamic
- Lower the heat and cook down for 20-25 minutes until the onions are caramelized. Isn’t that amazing? Remove pan from heat.
- Prepare your bread
- Preheat oven to 400 degrees (middle rack)
- Take your loaf of Italian bread and with a serrated knife cut 12 slices on the bias, about ½” thickness and about 4” in length
- Place on a non-stick baking sheet and drizzle each top with a bit of olive oil and place inside the oven for about 5 minutes, just to crisp it up.
- Remove Crostini from oven and rub each slice with the clove of garlic.
- Lightly salt & pepper the slices.
- Slice your avocado and remove the pit.
- Scoop out the avocado from the peel and cut ¼” thick slices. Lightly salt and pepper the avocado. Squeeze some fresh lemon on it to prevent oxidation.
- Place a slice or two of the avocado on top of the Crostini slices
- Add a spoonful of the onion mixture on top
- Serve while still warm!
