Roasted Carrots and Kale Chips are an easy and colorful way to eat more veggies!
Ingredients
- Olive Oil
- 1 bunch of kale
- 5 carrots
- Grated Parmesan
- Seasonings
- Salt & Pepper
Instructions
- Wash & dry the kale. Cut away the stems by running the knife along each side of the stem or you can fold the leaf in half and cut away the stem. Give the kale a rough chop.
- Wash & dry the carrots, cut in half and quarters.
- Place the kale on a baking sheet, drizzle with olive oil salt and pepper over the top.
- Place the carrots on a separate baking sheet or Pyrex dish. Drizzle with olive oil, salt and pepper over the top.
- Place the kale on the top rack and carrots on the middle rack of a 400 degree oven. Bake 15 minutes. Carrots will be al dente, kale will be crispy. Top with grated Parmesan cheese and enjoy!
