Roasted Cauliflower

Roasted cauliflower is a delicious alternative to salad and a good way to get your veggies in. Simple prep and about 50 minutes in the oven makes a tasty side or main dish!
Ingredients
- 1 whole cauliflower head - rinse and remove the bottom leaves and stem while keeping the florets together
Seasonings (I like to pre-mix in a small bowl)
- 1 tspn dill
- 1 tspn oregano
- 1 tspn onion powder
- 1 tpsn smoked paprika
- ½ tspn black pepper
- A few pinches of course sea salt, to taste
- Olive Oil
- 3 tbs melted butter
Instructions
- Preheat the oven to 375 convection roast. Place cauliflower core side down on a baking sheet. Drizzle with olive oil and with your fingers, coat evenly. Sprinkle the seasonings over the top, with your fingers, try to cover as much as you can. Place in the oven and roast for 40 minutes. Brush on melted butter. Return to the oven for 10-15 minutes more. Test for readiness by inserting a fork or knife into the center of the cauliflower. You'll know if it's tender! Remove from oven, sprinkle with course sea salt and serve.
