Ingredients
- 1 small head Romaine
- ¼ head iceburg
- 2 cups baby spinach
- ½ English cucumber
- 6 radishes
- 2 stalks celery
- 2 carrots (ribbons)
- 2 Roma tomatoes
- ½ cup Kalamata olives
Instructions
- Rinse and rough chop the Romaine, iceburg and place in salad spinner to dry
- Rinse spinach and place in salad spinner to dry
- Wash the rest of the veggies, pat dry.
- To a large bowl, add the Romaine, iceburg and spinach.
- Chop up the cucumber, radishes and celery, add to the bowl. Add carrot ribbons (use peeler length-wise on carrot to create long ribbons.) Cut the tomatoes into quarters, then slice wedges. Add olives. Toss with extra virgin olive oil, the juice of a lemon, season with sea salt & fresh cracked pepper.
