Roasted Cauliflower, Vidalia Onions and Sun Dried Tomatoes

Roasted cauliflower with sweet Vidalia onions and sun dried tomatoes is delicious as a side dish or main entree. #eatyourveggies
Ingredients
- 1 head of cauliflower, remove core, leaves, wash & break into florets
- 1 Vidalia onion, thinly sliced rings (I love the sweetness, you can also substitute red onion)
- 4 or 5 heaping tablespoons of sun dried tomatoes marinated in olive oil
- dill
- oregano
- cumin
- coriander
- smoked paprika
- turmeric
- (Make a delicious mix using a TBS of each
- Olive Oil
- Juice from ½ lemon
Instructions
- Preheat the oven to 400 degrees, bake
- Add cauliflower florets and onion to a roasting pan. Drizzle with olive oil, lightly toss with your hands. Add the premix of spices - eye it, you know how much is just right. Toss again with your hands. Add sun dried tomatoes, salt and pepper on top. Squeeze ½ lemon on top and bake in the oven for 30 minutes. Cauliflower is ready when fork-tender.
