Smokey Kielbasa and Veggies

This easy dish is perfect for lunch or supper. Smokey kielbasa and veggies served with warm bread. Enjoy!
Ingredients
- 2 red potatoes
- ½ yellow onion
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 8 oz package of Maitake mushrooms
- Half head of cauliflower (remove florets from the core)
- 1 carrot sliced on the bias
- 1 cup of fresh sauerkraut
- 1 LB Kielbasa, cut in 4 even pieces
- 1 tbsp fresh parsley, chopped
- Olive Oil
- ¾ cup of water
- Seasonings (I like to premix these and season as I go)
- 1 tbsp. smoked paprika
- 1 tbsp. oregano
- ½ tbsp. fennel seed
- Salt & Pepper
Instructions
- This recipe is so easy and really flavorful. In a saute pan add the olive oil, a couple of spins around the pan. To the oil add thinly sliced potatoes, yellow onion, shallots, garlic, mushrooms and cauliflower. Season with salt and pepper and the spice mixture.
- Cook on medium heat about 10 minutes. Add ½ cup of water and continue to cook for 5 minutes more until the veggies are soft and the cauliflower is tender.
- Add the carrot, sauerkraut and kielbasa and parsley. Add ¼ cup of water, cover the pan and simmer for 10 minutes.
- Serve with warm crusty bread.
